Ceramic blades are popular with chefs and cooks looking for knives that stay sharp longer than knives with ordinary steel blades. The ceramic blades on the new BonElite knives are created by dry pressing zirconia powder and firing them through a process called solid-state sintering. The blade is then ground to a very fine edge by grinding with a diamond-dust-coated grinding wheel.
At that point, the normal ceramic blade has a white appearance. But BonElite took the added measure of running the blades through an additional isostatic pressing to achieve higher durability and toughness, and resulting in the preferred black blade. The blade was then given an attractive high mirror finish for higher cosmetic appeal.
The ceramic, also known as zirconia, ranks 8.5 on the Mohs scale of mineral hardness, compared to 7.5 or 8 for ordinary hardened steel and a rank of 10 for diamonds. As a result, the ceramic blade is projected to keep its sharp edge as much as ten times longer than steel edges.
The extreme sharpness of the blade allows easy slicing of delicate foods such as tomatoes, fish and meat, in addition to relatively harder foods like raw vegetables and fruits.
